This coffee is comprised of small farm lots within the Guji zone of Shakiso. The people are known as Guji Oromo, and coffee farming has been a core part of the culture in the highland areas. Geographically, culturally, and in terms of cup flavours, these southern coffees have a different flavour profile while maintaining the same general characteristics; citrus and floral accents, a lively cup character. The cultivars used in Ethiopia are largely regional, distinct local strains of coffees that have spread from the wild forest plants of western Ethiopia, to Harar in the East and to the southern districts like Guji. The attention to detail is so important in coffee processing and these results are noticeable in the cup with improved sweetness and clarity.

Ethiopia is the number one producer of coffee in Africa, the 6th globally. There are 15 million workers in the coffee production industry there. Many Ethiopian coffees are made using the fully-washed process. The workers start out by removing the skin and pulp from the bean while the coffee fruit is still moist. The coffee skins are removed, then allowed to ferment, where enzymes loosen the sticky fruit pulp. This is where a lot of the sweet/fruit/floral/bright notes come from.
