Description

Layo Taraga Washing Station was founded in the year 2000, and serves 500 smallholder farms, each of whom owns about 1/2 hectare of land in the area around Haro Wachu town in the Uraga District.

The Layo Taraga cooperative is located in the Guji zone and is a member of the Oromia Coffee Farmer’s Cooperative Union, the largest cooperative union and exporter of coffee in Ethiopia. The Oromia region covers a large swath of land running east to west — from Harrar through Bale Mountain, West Arsi, Guji, the Abaya region of Yirgacheffe, just above the Oromo valley through to Jimma, Illubabor and finally West Wollega to the border of Sudan. You’d be hard-pressed to draw a more all-encompassing map of Ethiopia’s finest coffee terroir.

This lot of washed coffees, the cherry is sorted after delivery before being depulped and fermented underwater for 48–72 hours. Then the coffee is washed, and gets another soak that lasts 8–16 hours before being dried on raised beds for 9–12 days, on average. This Special Prep lot has gone through more intensive sorting throughout the process, ensuring that only ripe cherry is selected to start, and then removing any damaged, broken, mouldy, or otherwise defective beans by hand for the duration of processing.
