Sitio da Torre is situated in the municipality of Carmo de Minas, a hub for Brazilian specialty coffee, with coffee crops varying from 1,100 to 1,300 meters of elevation. The current manager of the farm is fourth generation Álvaro Antônio Pereira Coli. Together with his sister, who owns her own farm, they form the Sitio Da Torre family group of farms. The farm has yellow Catuai, yellow Bourbon and Acaiá varieties under cultivation. Until 2013, the estate only produced natural coffees. That year, they invested in modern, state of the art processing equipment to also start producing pulped natural coffees.

The two estates together keep on pushing for quality, constantly modernizing and renovating the farm and the infrastructure. Álvaro and his team constantly try out new post-harvest techniques as well. To dry their coffees, they have a large patio and smaller drying beds. Depending on the quantity and quality of the production, the coffee will be dried on the patio or on the beds. Microlots from the peak of the harvest, for example, will be dried on the beds. This will enhance the coffee’s brightness and cleanliness. In contrast, the larger volumes will always be dried on the patio. The team’s dedication has been rewarded with a nice number of coffee quality awards like CoE already, both for the natural and the pulped natural coffees.

This lot from Sitio Da Torre is a pulped natural yellow Bourbon. The coffee is mechanically depulped, which removes most of the coffee fruit. Without washing or fermentation, the sticky parchment is brought to the clean cement drying patio. The parchment will dry here for a couple of days up to a week, if the weather allows it.
